For personal reasons, I have several years of college coursework in business, but because of mounting student loans, have not been able to complete my bachelors degree. I'm in the process now of becoming a Microsoft Office Specialist for higher pay to pay down my student loans to complete my degree. My question is how will this look on my resume when I apply for jobs? Does the coursework without the degree make me look like an undesirable candidate?

Simply put, you want to show a prospective employer that you are pursuing higher education and that you have taken courses but that it is still a work in progress.
If it comes up in conversation during an interview, just tell them what you are doing. It shows fiscal responsibility and it shows your commitment to education. It also shows that you probably have a life long interest in education which is a fact for just about everybody these days.
You could also list an expected completion date but only if you have a firm target in mind.
