I don't believe there is a limitation of days of week to sign a contract.

The most important thing to have is the witness. If you can find 2 witnesses on a Sunday then go for it. You might not be able to file it until Monday though.

Also if you are really scared about it, Put the date as the monday, and sign it. Legally it will be alright as long as all parties agree to it.
