I have to teach a class (I'm a student) and I need to teach the class about fluids. Two of the cateogories are flow rate and viscosity.

How can I demonstrate/explain flow rate and viscosity? You will need a garden hose and a water hookup. Hook up the hose to the water, turn the water on. This will show a high flow rate. Now slowly bend (kink) the hose and this will show a reducing flow rate.
To show viscosity get water (low viscosity) and Honey (high viscosity) and pour them out into a bucket at the same time. The Honey will pour much slower than the water.
To explain flow rate you should talk about the garden hose with and withou a kink in it. The flow rate will be high when the hose is not kinked and low when it is kinked.
The explanation of viscosity is similar to the explanation of thick vs. thin.
good luck.
