Finally I would recommend finding someone in the business and intern with them while they are going through the process of opening a new location. Most likely you will have to go to another city because they will either steal your idea or not want to teach potential competition about the business. You could also look into interning with a franchise that is opening new locations in your area. That is how I learned. I now have two restaurants and I'm still learning.
One last thing. The number one reason why new bars go under is not enough financing. Plan for the worst case scenario and the double the amount of operating capital you think you'll need. I've never seen a new restaurant come in on budget.
